Curried Parsnip Soup with Fresh Ginger (vegan)
Saute a small chopped onion, add 2 big chopped parsnips, vegetable stock, curry powder, salt. Puree once the parsnips are soft. Add a few T. coconut milk and 1 t. of freshly-grated ginger. Serve.
